Fresh, generous, wholesome and flavorful. These are the prefect
words to describe Middle Eastern dishes that are continuously becoming popular
on all nations. Aside from being the frontrunners for oil supply and export,
countries in the Middle East Asia are blessed to have abundant spices making
each dish an explosion of flavors.
Shish Tawook. It’s an Arabian version of chicken barbeque except
that it is not smothered with that smoky and sweet barbeque sauce flavor. The
simple skewered chicken (you can add bell pepper, tomato, and pineapple in the
skewer) is served with pure garlic paste, fries, and pita bread also known as
kubus.
Kofta. A popular meat on stick stable common in Iran and
Pakistan made up from minced lamb or beef combined with several spices. The
minced mead can also be fried or baked, but in the Arab region, you can
commonly see it on cylinder shapes on sticks partnered with a distinctive spicy
sauce.
Kabsa. This is not your ordinary rice and chicken combination
that you often bought on fast food chains. Kabsa is made from biryani rice
cooked with the broth of chicken and sautéed with various Arabian spices. On
the other hand, the boiled chicken can either be grilled or roasted. This
sumptuous and quite heavy meal is best served with spicy blended tomato.
Sometimes, it is also partnered with yogurt to add more richness or fresh herbs
like bay leaves to neutralize the flavor.
Hummus. It’s like an Arabian version of a mayonnaise, though hummus is made from chickpea. It’s an all-purpose
spread that can be used from burgers and traditional hot pita bread. It’s also
used as dressing for baked potato or as dips for anything.
Grilled Halloumi. This is certainly a treat for those
who loves cheese.
But unlike the ordinary cheese, there are no acids or bacteria used during the
processing. These mini slabs are made from goat and sheep milk. Sometimes it is used as filling for traditional
Persian breads and pastries.
Fattoush. This salad is among the greatest
contributions of the Middle East to world culture. It is made up of lettuce,
crunch fried squares of pita, diced tomatoes, cucumbers, onion, garlic, lemon,
mint, and a generous amount of olive oil. It can be served as a side dish along
Mid-East’s protein dishes like grilled lamb or skewered chicken.
Shawarma. At present, it’s known as a cure for
hangover or a quick fix for a famished stomach. Well, this comfort food that
are frequently bought on sidewalks and eaten while walking is a part of
Mid-Eastern culture. Though there are plenty of variations of flavors, sauce,
and meats, the traditional skewered chicken, garlic sauce, and salad all
wrapped in Pita is the best way to it this in the Arab region.
Knafeh. Never underestimate the Mid-Eastern
kitchen in terms of sweet delicacies. Obviously, this Asian region have
abundant dishes to offer on your table either a savory or desert. Knafeh is a
Persian style cheesecake that uses Nabusi cheese. It has that soft texture with
a sweet and salty flavor. It’s a perfect partner for an afternoon coffee or
tea.
